Epica is made by the ancient Amarone method of partially air drying the grapes on racks. This technique concentrates the grapes and intensifies the fruit flavours, ultimately achieving multiple layers of complexities. A superb wine style with great individuality and always made with extremely limited production of only 1,860 bottles.
The 2015 Epica is made with 77% Shiraz and 23% Cabernet Sauvignon from our dry grown single estate of Mudgee fruit. Aged in 33% new French oak barriques and older French and American Hogsheads for 26 months.
